""SNEAK PREVIEW"" 

Did you ever wonder how Owner/chef Doug Wiese fixed his great ""Dooger Salmon with Butter," or how the Boondocks did their wonderful 'Seafood Hollandaise?"' What makes the ""Sea Hag's Clam Chowder" so good it gained a place in the Jean Hewitt New York Times Cook Book, and is there a secret ingredient in the "'Thai Mussel" recipe that is so popular at Ray's Boathouse in Seattle??? 

The ""Crab Foccacia Sandwich"" from The Inn at Gig Harbor is fantastic and The Alameda Brewhouse, in Portland, has a ""Crab Bisque"" that is out of this world. The "Seafood Sinigang," at the Athenian Inn at the Pike Street Market is one fine kettle of fish (part of Sleepless in Seattle was filmed here), and the 'Oyster Stew"" at Dan and Louis is known far and wide. 


Several recipes using Razor clams came straight from the owners of Pacific Seafood Co. in Clackamas, Oregon, and their Alas- kan supplier. The clams are flown in each day during clamming season. Recipes from Johnny's Seafood Co. in Tacoma, who im- port fish and seafood from all over the world, are here. Also, a recipe from Alaska Seafood Marketing Institute, plus many prize winning fish and seafood recipes from Northwest contests as well as some recipes from defunct restaurants that have aged so well, they are classics. 

Included is "Indian Salmon' from Raphaels in Pendleton and from Cannon Beach, the Executive Chefs at the Wayfarer and Stephanie Inn offer a delicious ""Northwest Bouillabaisse,," (The Wayfarer) and famous "'Crab Cakes with Lemon Aioli' (Stephanie Inn Dining Room). For an exotic touch, try "Trader Vic"s Bengal Salad"" and his ""Fish Baked in Ti leaves." 

"Trout Chowder"" from a man who was chief cook for the U.S. Weather Bureau at Point Barrow, Alaska, and retired in the lower "'48" is noteworthy, as well as the "Spicy Clam Fritters" and "Oysters Steamed in Dark Beer,"" from Chef Jenkins at the Duncan Law Seafood Consumer Center Cooking School in Astoria. 

From Barrow, Alaska, where they eat 22 whales a year, you learn several ways to prepare whale - just in case??? 

It's all here plus many other notable and interesting recipes, hints, facts, and how to do 'Tavern Shrimp,"" ""Gravlax Salmon,"' "Fish Jerky,," etc. It also has a chart for microwaving fish, plus best fish to barbeque, bake, etc. from the Oregon Trawl Commission. Red Lobster"s "'Cheese Garlic Biscuits"" and a Northwest prize winning 'Huckleberry Cobbler"" are included in this chapter. 

The chapter on "Quick Fixes' includes: A shortcut way to make Jacqueline Kennedy"s favorite ""Boula Boula soup,' 'Quick Shrimp Casserole,"' chowder base from packaged scalloped or au gratin potatoes, and many other quick and easy recipes. 

I added some "Tried and True," recipes from my files. "Do ahead Oriental Shrimp Salad" is one. I also ""borrowed"' and included two non-Northwest recipes: ""Daniel Webster's Chowder"" and ""The American Clambake."" Just for fun!!!
